Pulled Chicken Tacos

Slow-cooker simple meal for the whole family

  1. 1.5 lbs. of boneless chicken thighs (trim fat)
  2. 1 lb. of boneless chicken breast
  3. 1 (16 oz.) jar of medium salsa
  4. 1 small onion, chopped
  5. 1 cup of water
  6. 1 teaspoon of cumin
  7. Sea salt & pepper, to taste
  8. 12 organic taco shells or endive lettuce leaves
  1. Combine chicken, salsa, onion, water, cumin, salt and pepper in a slow cooker and cook on low for 5 hours
  2. Remove the chicken, shred with fork and add back to the slow cooker to combine with the sauce
  3. Transfer to serving bowl
  4. Assemble tacos on lettuce leaves or in taco shells as desired
