Ingredients
- 1.5 lbs. of boneless chicken thighs (trim fat)
- 1 lb. of boneless chicken breast
- 1 (16 oz.) jar of medium salsa
- 1 small onion, chopped
- 1 cup of water
- 1 teaspoon of cumin
- Sea salt & pepper, to taste
- 12 organic taco shells or endive lettuce leaves
Instructions
- Combine chicken, salsa, onion, water, cumin, salt and pepper in a slow cooker and cook on low for 5 hours
- Remove the chicken, shred with fork and add back to the slow cooker to combine with the sauce
- Transfer to serving bowl
- Assemble tacos on lettuce leaves or in taco shells as desired
