Pulled Chicken Tacos

Ingredients
  

  • 1.5 lbs Boneless Chicken Thighs (trim fat)
  • 1 lb Boneless Chicken Breast
  • 1 16 oz. Jar Medium Salsa
  • 1 Small Onion (Chopped)
  • 1 cup water
  • 1 tsp cumin
  • Sea Salt & Pepper (To Taste)
  • 12 Organic Taco Shells (Or Endive Lettuce Leaves)

Instructions
 

  • Combine chicken, salsa, onion, water, cumin, salt and pepper in a slow cooker and cook on low for 5 hours
  • Remove the chicken, shred with fork and add back to the slow cooker to combine with the sauce
  • Transfer to serving bowl
  • Assemble tacos on lettuce leaves or in taco shells as desired
