Walnut-Cinnamon Coffee Cake

Ingredients
  

For The Cake

  • 2 tbsp coconut oil (plus some extra for greasing the pan)
  • 5 Eggs
  • 1/2 cup honey (or coconut palm sugar)
  • 4 tbsp coconut milk
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 handful walnuts

For The Swirl

  • 2 tsp cinnamon
  • 1 tbsp coconut oil
  • 1 tbsp honey

Instructions
 

  • Preheat oven to 325
  • Grease sides of baking pan (8x8 or slightly smaller works best)
  • Add eggs, sweetener (honey or sugar), 2 tbsp coconut oil, and coconut milk to food processor. Blend for 45 seconds.
  • Add in coconut flour, baking soda and sea salt. Blend for additional 15 seconds.
  • Stir in walnuts by hand.
  • Make the swirl by blending all the ingredients (coconut oil, honey and cinnamon) in separate bowl to combine then swirl by hand into cake batter.
  • Pour batter into greased pan and bake for 25 minutes. Cool for 20 (if you can wait that long).
