Taco Skillet

Ingredients
  

  • 2 tbsp Olive oil
  • 2 garlic cloves, minced
  • 1 zucchini, diced
  • 1 large carrot, finely diced
  • 2 bell peppers, diced
  • 1 large onion, diced
  • 1 lbs ground beef
  • 1 tsp chili powder
  • 1 can can of crushed tomatoes (14.5 ounces)
  • 2 cups fresh baby spinach
  • 1 cup shredded cheddar chesse
  • salt & pepper to taste

Optional

  • 1 can black beans, drained & rinsed (14.5 ounces)
  • Scallions, diced

Instructions
 

  • Heat oil in a large skillet over medium heat. Add garlic and onion and cook for 1 minute.
  • Add in zucchini, carrots, and peppers and let cook for 5-7 minutes, until veggies begin to soften.
  • Add in ground beef, chili powder, paprika, garlic powder, salt, and pepper and cook until meat is well done.
  • Add in tomatoes and mix to combine. Reduce heat to a simmer for 5 minutes. Add in spinach and mix until wilted. Taste and adjust seasoning as desired.
  • If adding cheddar cheese, sprinkle over the top and cover the skillet with a lid until cheese melts.
  • Serve hot with optional garnishes and serve with tortillas for dipping.
