Walnut-Cinnamon Coffee Cake

For the cake
- 2 tbsp coconut oil (plus some extra for greasing the pan)
- 5 eggs
- 1/2 cup of honey (or coconut palm sugar)
- 4 tbsp coconut milk
- 3/4 cup coconut flour
- 1/2 tsp baking soda
- 1/2 tsp sea salt
- handful of walnuts
For the Swirl
- 2 tsp cinnamon
- 1 tbsp coconut oil
- 1 tbsp honey
Instructions
- Preheat oven to 325
- Grease sides of baking pan (8x8 or slightly smaller works best)
- Add eggs, sweetener (honey or sugar), 2 tbsp coconut oil, and coconut milk to food processor. Blend for 45 seconds.
- Add in coconut flour, baking soda and sea salt. Blend for additional 15 seconds.
- Stir in walnuts by hand.
- Make the swirl by blending all the ingredients (coconut oil, honey and cinnamon) in separate bowl to combine then swirl by hand into cake batter.
- Pour batter into greased pan and bake for 25 minutes. Cool for 20 (if you can wait that long).
